One of my favorite meals to make is cauliflower fried rice and this recipe gets me three servings that are perfect for dinner or work lunches!
To start I get a box of cauliflower pearls from Sprouts and make them a bit smaller in my food processor. This box is 16 ounces and is the perfect amount.
I also grab my veggies which are five shallots, a handful of red onion, a couple garlic cloves, carrots, and peas as well as three eggs. I chop up all of the veggies except for the green part of the shallots and scramble two egg whites plus a whole egg and set aside.
Once the eggs are scrambled, I sautée the chopped vegetables in avocado oil for a few minutes then raise the heat to med-high and mix in all of the cauliflower. I add the soy sauce on top of that and put the lid on the pan but mix a bit every minute. I do this for six minutes then mix the scrambled egg back in and turn off the stove. I chop up the green part of the shallots and mix those on top and get to eating!
This meal is so amazing and you can add is more or less veggies and make it your own! I always throw in some extra red onion and garlic because I think it’s so yum (and I’m not kissing anybody anytime soon, lol).
