Growing up when my family would have steak it was always WELL done. Because of that, I thought anything less was gross. As I got older, I started to order medium-well, then medium, and now medium-rare! It’s so much more flavorful and in reading Deep Nutrition, I learned that it’s healthier too! When the meat is cooked well, it transforms the structure of it and makes it hard to digest and takes away any nutrients. I told my mom this when I drove home on Tuesday and she was excited to tell me that she has also been ordering her steak differently and not getting it well done! I was proud of her and when we got some groceries yesterday, we picked up some nice juicy steaks for me to make for dinner. After I seared them on the stove and threw them in the oven, I took them out and was hoping for a medium-rare temp of 135°. The little thermometer said 120° so I flipped them and put them in for a few more minutes. Then I took them out, the thermometer said 120°, and I put them back in (I didn’t want super rare inside), this kept happening and the thermometer was barely moving! I finally said f- it and took them out and let them rest before serving. I didn’t want to cut them open earlier (before I kept putting them back in the oven) and risk losing all the juice so I didn’t know that the thermometer was WAY off and they were actually close to well done. I was SO bummed because I was excited to make my parents a good steak for dinner (it was still good, just not what I wanted). I also made them roster sweet potatoes (bc I haven’t had them in forever and I love them) and roasted Brussels sprouts with balsamic and coconut aminos drizzled over! Overall still a good meal and I immediately bought my mom a new meat thermometer 🌿
Did you know that stress lowers your immune system? I’m moving in TWO WEEKS and while I’m SO excited to have a bigger space (and an actual office desk), just thinking about the move is giving me more white hairs. To give my immune system a boost, I’ve been using the @piquetea immune support at least once a day! Elderberry is the prominent flavor so it tastes good while it does good 🌿

Last night Austin and I went to IKEA (his first time EVER which is weird, has he ever been to Earth before??) and the restaurant was open so I made him eat the meatballs. Turns out they have wheat so I got the plant balls which were quite delicious. We also got sides of salad, lox, and veggies! After our IKEA adventure, we stopped by Whole Foods so I can get some groceries (going to miss being near the beautiful Burbank @wholefoods) and since we were already on the lox train we got some more to have a little meal after. We warmed @outeraislegourmet cauliflower thins in my toaster oven, added @miyokoscreamery cultured vegan cream cheese (great ingredients list and I’m happy Austin is finally coming around to limiting dairy consumption), topped it with lox and avocado, and sprinkled on salt, pepper, dill, and I added a tad of cayenne on mine! They were SO good and made a nice healthy snack.
