Today for lunch I took a little inspo from @urhealthnut! This morning I made a one pan shrimp fajita dish that I split into today’s and tomorrow’s lunch but only used red bell peppers, some different spices, and added some eggplant! Instead of making it into a taco I put it on top of some mixed greens with nutritional yeast instead of feta cheese (to make it #dairyfree)! I warmed up everything except for the greens as work and added half an avocado on top and it was SO GOOD! Hey, what’s up, hello! It’s been a minute. (Or many). Work, although not as crazy as award season was, has definitely started taking up a lot of time again (my one week free is deeply missed) and honestly for the past threeish weeks I’ve been pretty unmotivated to do anything. I’m still doing pretty much everything I need to each day but a few weeks ago the thought of doing things was dreadful and then wanting to go to the gym but being unmotivated just made me feel super “meh” when I was there (but I think being bloated for a week and a half which made me feel so gross was the real culprit with that). Early last week, still doing the exact same thing I’ve been doing, I woke up and just felt great! Not sure why I had that slump but maybe I did really need to just slow down and rest. With working weekends, celebrating my 23rd birthday, doctors appointments, and helping my friend move out I was just completely exhausted but kept pushing myself because ~I hAvE To do EVeRyThinG EvErYDay~ and while I’m aware that it’s not good for me I also hate the idea of not accomplishing everything I want to and it’s something I’m working on getting more control of! But anyway, I used last week to get back in my groove after that slump, I really enjoyed my workouts and felt great, and I’m ready to take everything on again but also rest and relax when I know I need it so I don’t burn out. I’m also excited to share new lunches I’ve been making, how my two weeks of intermittent fasting went, and much more! Haven’t posted a “progress-y” pic like this in awhile. For the last three weeks my left shoulder had been KILLING me. It started with a lat pull down that just didn’t feel right and then sharing a bed with a friend and sleeping uncomfortably and waking up the next morning to do the Hollywood Sign hike and the next day it hurt to move in certain directions. I bought heating packs that I would wear under my shirt at work and an ice pack for when I’m home because I couldn’t tell if it was the bone or a muscle that hurt so I figured I would do ice and heat. I also kept working out but went a little lighter with upper body days (just finished week 5 of my second round of #StrengthFeed) and stretched and rubbed it every chance I could get. On Wednesday night, I tried getting a massage to get any shoulder knots out but the place I went to had a great aesthetic but no so great pressure (woke up feeling stiffer and still all knotted up, tbh). Today I went to the gym and it surprisingly felt pretty good! It was a bit stiff in the beginning but extra stretches and warming up made that quickly go away and I’m hoping that this is the end of my shoulder pain. On a different note, taking this pic made me realize that any abs I was getting in December have dwindled away during award season where catered meals and high stress had me snacking maybe a bit too much. For my month off in March I wanted to experiment with Intermittent Fasting and accidentally started this past Monday (which is fine since I now I only have next week off) and after 5 days of it I’m feeling great and proud of myself for having more self control and not constantly snacking! Today’s lunch! A bowl of quinoa that I made in creamy tomato soup from @sprouts, made with the same 2-1 quinoa to liquid ratio just like making it in water, with kale thrown into the pot to steam with it for the last 5ish minutes. I topped it off with washed (and no salt added) chickpeas, some roasted sweet potato, a bit of avocado, and lemon juice! So good, so simple and easy to throw together, and full of great macronutrients.
